Cottage
Cheese Kheer / Chena Kheer / Chena Khiri / Paneer Kheer
It’s an Odisha special sweet dish and a delicious sweet. It’s
a combination of Rabidi and cottage cheese / Paneer. This sweet requires less ingredients which is normally available in all households.
Ingredients:

Full Cream Milk (1.5 ltr.)

Sugar (4-5 tbsp)
·
Elaichi / Cardamom (4-5 nos.)
·
Corn Flour (1/2 tbsp)
·
Lemon Juice or Vinegar (4 tbsp)
·
Saffron (If available)
Dr Dry Fruits (Kaju / Almonds as per taste)

Preparation:
Cottage Cheese Preparation –
Take 1 ltr. Full cream milk in Bowl and boil it. Stir it in-between
so that it will not get burnt from bottom. When it starts boiling add Vinegar /
Lemon Juice into it. After you add the Lemon juice you can see that milk starts
curdled and water gets separated from it. Then Strain it and leave it for some
time to remove the extra water present in cottage cheese.
You can use Paneer in place of Cottage Cheese by scumbled it.
Thicken Milk /
Rabidi Preparation –
Take ½ ltr. Of milk in a bowl and heat in low flame, add 4-5
tbsp of sugar into it and stir it for around 10-15 minutes. Take ½ tbsp cornflour in a small bowl and add 1.5 tbsp water into it, mix it. Add this
cornflour mix into the boiled milk. Once the milk becomes thick stop the flame.
Add cardamom powder and saffron(if available) into it. Leave it until it comes
to the room temperature.
Then serve it by adding the cottage cheese / Paneer and cut dry fruits into it.
Best served in cold condition or at room temperature.
